This curry was a hit with our little man. It is so easy, cheap and contains all the essential protein, carbohydrates and fats for your growimg human.

Suitable for children aged 12+ months.

Ingredients

  • 1 can organic coconut milk
  • 300g grass feed beef
  •  3 Roma tomatoes, chopped into cubes
  • 1 cup brown rice
  • 3 carrots, chopped into rounds
  • 1 tbsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tsp ginger powder
  • 1 cup water 

Method 

  1. Place coconut milk, beef, tomatoes, carrots, spices and water in a pot over medium heat.
  2. Simmer for 30 minutes, making sure to stir every now and then.
  3.  Add in the rice once the beef is tender.
  4. Cook for a further 30 minutes on a low heat until rice is cooked through.
  5. Best served warm, we found that the curry was better and thicker the next day too as the rice absorbed more liquid over night.
